Rachel and Timo's Mango Vakalomavinaka

Team Fiji


3 mangoes, ripe but still firm
¼ cup honey
Pinch salt
1.5 cups water
1 tsp cloves
1 coconut, scraped
1 orange, juiced
1 cup Chinese cabbage or mustard leaves, cooked and chopped
½ cup peanuts, crushed


  1. Peel mangoes, salt and stand for 5 minutes.
  2. Simmer honey, cloves, mangoes in water for 5 minutes.
  3. Scrape coconut and squeeze for thick cream.
  4. Clean and chop Chinese cabbage, blanch for 30 seconds.
  5. Scrape out the mango flesh of 1 mango.
  6. Blend the scraped mango flesh with Chinese cabbage and orange juice.
  7. Dish out the remaining 2 mangoes onto serving plate.
  8. Pour the sauce over the mangoes and garnish with coconut cream.
  9. Top with crushed peanuts.
