Rachel and Timo's Mango Vakalomavinaka

INGREDIENTS
3 mangoes, ripe but still firm
¼ cup honey
Pinch salt
1.5 cups water
1 tsp cloves
1 coconut, scraped
1 orange, juiced
1 cup Chinese cabbage or mustard leaves, cooked and chopped
½ cup peanuts, crushed
METHOD
- Peel mangoes, salt and stand for 5 minutes.
- Simmer honey, cloves, mangoes in water for 5 minutes.
- Scrape coconut and squeeze for thick cream.
- Clean and chop Chinese cabbage, blanch for 30 seconds.
- Scrape out the mango flesh of 1 mango.
- Blend the scraped mango flesh with Chinese cabbage and orange juice.
- Dish out the remaining 2 mangoes onto serving plate.
- Pour the sauce over the mangoes and garnish with coconut cream.
- Top with crushed peanuts.
