Joey & Lee Anne's Talauti ( a dessert)

TEAM PAPUA NEW GUINEA

INGREDIENTS

2 kulaus (Young coconuts)
1 pineapple (cut into halves and remove spine)
1 pawpaw ((Peel and cut into half, and discard seeds)
½ kumquat
Handful of mint leaves (roughly 5)

METHOD

  1. Break open the young coconuts and preserve the juice in a bowl.
  2. Scrape the inner flesh of the coconuts into the juice.
  3. Scrape the flesh of the pineapple and pawpaw using the coconut grater (alternatively you can use a kitchen grater to grate these)-add to the bowl of juice.
  4. Mix everything well, squeeze half a kumquat for flavouring and freeze in individual bowls or jars. Serve with ice and garnish with mint.
