INGREDIENTS

4 purple kaukau (kumala)

METHOD

  1. Cut Kaukau into bite size chunks and place in a pot of boiling water simmer until cooked.
  2. Once the kaukau is cooked, remove from the pot and set aside, Preserve the kaukau stock and continue boiling on low and stirring until it turns into a syrup. (Make sure you keep a close eye on the heat, so it doesn’t dry up or burn)
  3. Pour the kaukau syrup into a small bowl or over the top of the kaukau.
