INGREDIENTS
4 purple kaukau (kumala)
METHOD
- Cut Kaukau into bite size chunks and place in a pot of boiling water simmer until cooked.
- Once the kaukau is cooked, remove from the pot and set aside, Preserve the kaukau stock and continue boiling on low and stirring until it turns into a syrup. (Make sure you keep a close eye on the heat, so it doesn’t dry up or burn)
- Pour the kaukau syrup into a small bowl or over the top of the kaukau.
