Sumi and Avi's Poached Mahimahi in Bu Juice, Fresh Coconut Cream, Lemongrass and Lime

TEAM FIJI

INGREDIENTS

1 Brown coconut (1 cup of coconut cream)
1 Fresh Green coconut
2 stalks of Lemongrass
1 thumb of fresh Turmeric (finely sliced)
Chillies
Mahimahi
1 fresh Lime
Salt and Pepper
1 tsp sugar
Handful of fresh Coriander

METHOD

  1. Scrape brown coconut and squeeze to make 1 cup of coconut cream.
  2. Extract the juice from the green coconut and add to the coconut cream.
  3. Heat the pan add the sauce (above) and bring to the boil.
  4. Add lemongrass and fresh turmeric.
  5. Simmer until starting to thicken then add Mahimahi chunks and cook for 7 minutes.
  6. Add lime juice, salt and pepper and sugar if needed, plate up and garnish with fresh coriander.
