Rachael & Akuila's Vakalavalava

TEAM FIJI

INGREDIENTS

½ cup thick coconut cream
2 cups yam(grated)
1 over ripe vudi (mashed)
2 cups cassava starch
½ cup honey
Lots of naqai leaves/vasili leaves

For the Sauce:

1 overripe mango (peeled and seeded)
5 cups water
1 cinnamon stick
5 cloves
1 star anise
2 tbl cassava starch
½ cup honey and extra for garnish
1 bunch mint leaves

METHOD

  1. Mix the first 5 ingredients in a bowl and scoop a spoonful into the center of a Vasili leaf... (Naqai leaf) and fold to make a pouch, tie the leaf pouch so it is firm and drop it into a pot of boiling water. Cook for 15 minutes
  2. Place the first 5 ingredients of the sauce recipe, into a pot and cook for 10 minutes. Lower the heat and cook for another 5 minutes. Turn off and remove the cinnamon stick, star anise and cloves before blending to make a smooth sauce
  3. Return sauce to pot and add cassava starch, cook for another few minutes stirring constantly until the sauce thickens. Add honey and a few finely chopped mint leaves, mix well
  4. When plating, take cooked dessert out of the nagai leaf and drizzle with the sauce, top with honey and mint leaves.
