Rachael & Akuila's Dairo Vakasoso

INGREDIENTS

4 large dairo (sea cucumber, pre-cooked)
1 cup mangrove beans (pre-cooked)
1 cup Sea Urchins (pre-cooked)
1 cup Ota heads (blanched and split)
½ cup tomatoes (diced)
1 onion (diced)
2 coconuts (scraped and squeezed to make 4 cups of cream, lolo)
Salt to taste

METHOD

  1. Clean out the inside of the dairo, wash thoroughly and tap dry. Fill the inside with layers of pre-cooked mangrove beans, onion slices, tomato slices, split ota heads and season well. Use toothpicks to close the opening and cook in lolo for 5 minutes on high.
  2. Turn the heat down to simmer for another 10 minutes before turning off the heat and serve.
