Shamim and Manasa’s Yam Infused with Lemongrass and Turmeric

INGREDIENTS

500 grams yam
1 stalk lemongrass
100 grams onion
20 grams turmeric
15 grams ginger
100 ml honey
20 grams moringa, infuse with oil (saigan)
20 grams coriander
5 grams chilli
20 grams onion
15 grams curry leaf (quick fried)
20 ml virgin coconut oil
1 star anise
1 stick cinnamon
coconut, fresh grated for garnish
paprika, pinch

METHOD

  1. Peel yam
  2. Cut into chunks
  3. Place in pot of boiling water
  4. To the pot add lemongrass, onion, turmeric, star anise and cinnamon stick
  5. Boil for 20 minutes
  6. For infused oil, heat the oil in a small pot
  7. Place 20 grams onion, turmeric, a few curry leaves, coriander leaves in coconut oil and allow to infuse
  8. To assemble, slice yam and place 4 pieces on plate
  9. Season
  10. Drizzle infused oil over yam
  11. Garnish with fresh coconut and a sprinkle of paprika and fried curry leaves
