Shamim and Manasa's Bean and Moca Salad

Team Fiji


1 bundle snake beans
1 bundle butter beans
1 bunch coriander
1 tbsp virgin coconut oil
1 tsp cumin seed
1 tsp mustard seed
1 tsp fenugreek seed
1 eggplant, finely diced
2 tomatoes, chunky diced
1 bundle moca (Fijian spinach), leaves only
1 onion, thinly sliced
2 cloves garlic minced
Salt to taste


  1. Clean beans and cut into 2 inches pieces.
  2. Combine onion and garlic in mortar and pestle to make a paste.
  3. Fry all spices in coconut oil for a minute.
  4. Add beans, eggplant, moca and tomato to spices and fry until tender.
  5. Season well and serve.
