Shamim and Manasa’s Yam Infused with Lemongrass and Turmeric

	INGREDIENTS
500 grams 			yam
1 stalk 			lemongrass
100 grams		onion
20 grams			turmeric
15 grams			ginger
100 ml 			honey
20 grams 			moringa, infuse with oil (saigan)
20 grams 			coriander
5 grams 			chilli
20 grams 			onion
15 grams 			curry leaf (quick fried)
20 ml 			virgin coconut oil
1 				star anise
1				stick cinnamon
				coconut, fresh grated for garnish
				paprika, pinch
 
	METHOD
- Peel yam
- Cut into chunks
- Place in pot of boiling water
- To the pot add lemongrass, onion, turmeric, star anise and cinnamon stick
- Boil for 20 minutes
- For infused oil, heat the oil in a small pot
- Place 20 grams onion, turmeric, a few curry leaves, coriander leaves in coconut oil and allow to infuse
- To assemble, slice yam and place 4 pieces on plate
- Season
- Drizzle infused oil over yam
- Garnish with fresh coconut and a sprinkle of paprika and fried curry leaves
