Mafi and Mia's Simple Tongan Ratatouille

INGREDIENTS

1 CUP DICED KUMALA (SWEET POTATO)
1 CUP DICED PUMPKIN
3 TBSP COOKING OIL
1 CUP DICED EGGPLANT
1 CUP CHERRY TOMATOES
1 TBSP LEMON JUICE
1 TBSP HONEY

METHOD

  1. BRING A POT OF WATER TO THE BOIL AND ADD SALT, THEN KUMALA.
  2. AFTER 4 MINUTES THEN ADD PUMPKIN.
  3. COOK ALL INGREDIENTS UNTIL JUST TENDER.
  4. TAKE ALL INGREDIENTS OUT FROM HOT POT, DRAIN AND LET COOL.
  5. IN A FRYING PAN ADD COOKING OIL AND FRY EGGPLANT UNTIL ITS COOKED.
  6. MIX ALL INGREDIENTS IN A CLEAN BOWL AND ADD THE LEMON JIUCE AND HONEY MIXED TOGETHER IN A SEPARATE BOWL, IT IS NOW READY TO SERVE, (SEASON WITH SALT AND PEPPER IF DESIRED).
