Lopeti and Kalo's Vai Siaine

INGREDIENTS

Juice and flesh of 1 young (green) coconut
4 ripe bananas (chopped)
1 stalk of lemon grass or 2 lemon leaves

METHOD

  1. Break the young coconut in half. Pour the juice into a blender then scrape the flesh in as well. Blend until smooth.
  2. Pour the blended mixture into a saucepan and add chopped bananas.
  3. Slowly bring to the boil, then add lemongrass or lemon leaves.
  4. Serve in the coconut shells while hot.
