Francis and Tupou's Mixed Vegetable Salad

TEAM TONGA

INGREDIENTS

1 cup Green Beans (cut into 2 inch pieces)
2 medium size Carrots
5 small Tomatoes or 2 medium sized
4 leaves of purple and Green Lettuce
2 tsp Fish sauce
½ tsp White Vinegar
1tsp Lemon juice
Black pepper and salt to season

METHOD

  1. Blanch the green beans in boiling water (remove from pot and plunge into a bowl of cold water, then drain).
  2. Cut the Carrots into the same size pieces as the beans and place them into the boiling water. Take out once cooked through and plunge into cold water then drain).
  3. Cut the tomatoes into quarters, and cut the cleaned lettuce leaves in half. Place lettuce leaves on plates and add the cooked beans and carrots. Place tomatoes on the top.
  4. STEP FOUR:
    Make the dressing: Combine fish sauce, white vinegar and 1tsp lemon juice, and mix together. Taste to see if it needs salt and pepper. Pour over the salad.
