Tiose and Lei's Breadfruit Patties
TEAM SAMOA
INGREDIENTS
1 medium size Breadfruit
2 tsp Butter
Pinch of Salt
Pinch of Pepper
1 Egg
Half cup Flour
1 thumb Ginger
1 clove Garlic
1 whole Bok Choy
1 tsp Virgin Coconut Oil
1 tbsp fresh Coconut Cream
METHOD
- Peel the breadfruit, then cut into small pieces, boil in hot water for 10 minutes.
- Mash well then add butter, salt and pepper.
- Allow the breadfruit mixture to cool for 10 minutes and then add egg and flour, mix well.
- Finely chop ginger and garlic.
- Wash the Bok choy and slice thinly, then fry with garlic and ginger.
- Combine the Bok Choy mixture through the breadfruit mash.
- Shape into patties.
- Heat the fry pan and add virgin coconut oil and fry the patties until golden brown on both sides. Take out of pan and rest on plate.
- Place coconut cream in a small pot and boil until thick like a syrup.
- Place patties onto a plate and top with a drizzle of coconut cream.
