Tiose and Lei's Breadfruit Patties

INGREDIENTS

1 medium size Breadfruit
2 tsp Butter
Pinch of Salt
Pinch of Pepper
1 Egg
Half cup Flour
1 thumb Ginger
1 clove Garlic
1 whole Bok Choy
1 tsp Virgin Coconut Oil
1 tbsp fresh Coconut Cream

METHOD

  1. Peel the breadfruit, then cut into small pieces, boil in hot water for 10 minutes.
  2. Mash well then add butter, salt and pepper.
  3. Allow the breadfruit mixture to cool for 10 minutes and then add egg and flour, mix well.
  4. Finely chop ginger and garlic.
  5. Wash the Bok choy and slice thinly, then fry with garlic and ginger.
  6. Combine the Bok Choy mixture through the breadfruit mash.
  7. Shape into patties.
  8. Heat the fry pan and add virgin coconut oil and fry the patties until golden brown on both sides. Take out of pan and rest on plate.
  9. Place coconut cream in a small pot and boil until thick like a syrup.
  10. Place patties onto a plate and top with a drizzle of coconut cream.
