Nina & Iggy's Island Baked Fish

INGREDIENTS
1 whole snapper scaled and gutted and patted dry
salt
3 tablespoons lemon juice
2 garlic cloves chopped finely
2 tsp minced fresh ginger
1 cup of chopped fresh coriander
1 tsp masala spice
2 tablespoons olive oil
1 pinch salt
chilies-optional for garnish and serving
lime wedges and coriander to garnish
METHOD
- Preheat the oven to 180C.
- Rub the fish with some salt and lemon juice
- Blend garlic and ginger and a bit of masala, coriander, and olive oil
- Cut 3 diagonal slashes on each side of the fish. Rub the blended mix all over and then put the rest inside the gut cavity. .
- Wrap in banana leaves or foil
- Bake for 30-45 minutes or until the fish is cooked
- Garnish with the chilies, lime wedges and coriander
