Nina & Iggy's Island Baked Fish

INGREDIENTS

1 whole snapper scaled and gutted and patted dry
salt
3 tablespoons lemon juice
2 garlic cloves chopped finely
2 tsp minced fresh ginger
1 cup of chopped fresh coriander
1 tsp masala spice
2 tablespoons olive oil
1 pinch salt
chilies-optional for garnish and serving
lime wedges and coriander to garnish

METHOD

  1. Preheat the oven to 180C.
  2. Rub the fish with some salt and lemon juice
  3. Blend garlic and ginger and a bit of masala, coriander, and olive oil
  4. Cut 3 diagonal slashes on each side of the fish. Rub the blended mix all over and then put the rest inside the gut cavity. .
  5. Wrap in banana leaves or foil
  6. Bake for 30-45 minutes or until the fish is cooked
  7. Garnish with the chilies, lime wedges and coriander
