Tino and Teuila's Laupele Fritters

INGREDIENTS

20 Laupele Leaves (Bele). Spinach or Silverbeet could be used as a substitute
100g cooked breadfruit (Cassava or Potato could be substituted)
1 tbsp chives
1 tbsp flour (Cassava or Cornflour could be used here)
Pinch of salt
Pinch of cracked pepper
Regular cooking oil
1 ripe Avocado
1tbsp Coconut Cream

METHOD

  1. Blanche the Laupele in boiling water, plunge into cold water, then squeeze to get the water out. Finely chop.
  2. Mash the cooked breadfruit and mix it with laupele in a medium bowl.
  3. Chop chives and add to the mix.
  4. Fold them in and make sure all the ingredients combine very well.
  5. Add the flour just to make it a firm batter.
  6. Season with salt and pepper.
  7. Heat up the oil in a frying pan.
  8. Shape into patties and fry on a medium heat until the fritters until golden brown.
  9. When the fritters are cooked take them out and put them on a plate with a paper towel to drain oil.
  10. Slice some avocado length wise place them in a star pattern then place the fritters in between the avocado slices. Just before serving drizzle fresh coconut cream on the fritters and serve.
