Tino and Teuila's Green Banana Curry

INGREDIENTS
10 x cooked Green Banana (bring a pot of water to the boil with a tsp of vinegar or milk, trim the stalk end of the banana and add the banana with the skin on into the boiling water-after 10-15 minutes the skin should be starting to split, this means they are cooked-take them out of the water and drain, you can peel when cool enough to handle)
1 medium Onion sliced
2 or 3 Garlic cloves
1 thumb of Ginger
2 tspn of Curry Powder
Handful of Coriander finely chopped
1 cup Coconut Cream
¼ cup coconut juice from a green Coconut (suā popo)
Lime wedges
METHOD
- Chop cooked banana (about 2cm thick) and set aside in a medium bowl.
- Heat up a frying pan and sweat the onions, garlic and ginger.
- Add curry powder and sauté well to bring out the flavours.
- Add the bananas and sauté for 5 minutes with the mixture in the frying pan and stir them altogether.
- Just when all the flavours are infused in the bananas add in the coconut cream and bring it to boil.
- Add the coconut juice and boil it again.
- Lastly, add in the coriander and fold it in and now it’s ready to serve.
- Season with salt and pepper to taste and add a of squeeze lime juice for flavour.
