Tino and Teuila's Green Banana Curry

INGREDIENTS

10 x cooked Green Banana (bring a pot of water to the boil with a tsp of vinegar or milk, trim the stalk end of the banana and add the banana with the skin on into the boiling water-after 10-15 minutes the skin should be starting to split, this means they are cooked-take them out of the water and drain, you can peel when cool enough to handle)
1 medium Onion sliced
2 or 3 Garlic cloves
1 thumb of Ginger
2 tspn of Curry Powder
Handful of Coriander finely chopped
1 cup Coconut Cream
¼ cup coconut juice from a green Coconut (suā popo)
Lime wedges

METHOD

  1. Chop cooked banana (about 2cm thick) and set aside in a medium bowl.
  2. Heat up a frying pan and sweat the onions, garlic and ginger.
  3. Add curry powder and sauté well to bring out the flavours.
  4. Add the bananas and sauté for 5 minutes with the mixture in the frying pan and stir them altogether.
  5. Just when all the flavours are infused in the bananas add in the coconut cream and bring it to boil.
  6. Add the coconut juice and boil it again.
  7. Lastly, add in the coriander and fold it in and now it’s ready to serve.
  8. Season with salt and pepper to taste and add a of squeeze lime juice for flavour.
