Silas and Patrick's Warm Altuk Salad

INGREDIENTS
1 bunch Island Cabbage (Spinach can be substituted here)
5 big Cherry Tomatoes
1 cup of Coconut Cream
4 Eggs
5gms Nagai Nuts (Cashew Nuts can be substituted here)
½ Brown Onion (chopped)
METHOD
- Pick the island cabbage (best leaves) and boil some water in a pot.
- Slice tomatoes top to tail and place on a plate.
- Scrape the coconuts and squeeze one cup of the cream into a pot – bring this to a boil for roughly 5mins.
- Whisk the egg, add salt and pepper then fry in a small pan until the egg is light in colour.
- Chop the nagai nuts for garnish.
- When all is ready, blanch the island cabbage in the boiling water with some onion and salt to taste… Strain and squeeze out water then place the blanched Island Cabbage.
- Put the Fold the fried egg into thirds and place on top of the tomato.
- Place Island cabbage on top of the egg and tomato.
- Top with coconut cream and garnish with nagai nuts.
