Silas and Patrick's Warm Altuk Salad

INGREDIENTS

1 bunch Island Cabbage (Spinach can be substituted here)
5 big Cherry Tomatoes
1 cup of Coconut Cream
4 Eggs
5gms Nagai Nuts (Cashew Nuts can be substituted here)
½ Brown Onion (chopped)

METHOD

  1. Pick the island cabbage (best leaves) and boil some water in a pot.
  2. Slice tomatoes top to tail and place on a plate.
  3. Scrape the coconuts and squeeze one cup of the cream into a pot – bring this to a boil for roughly 5mins.
  4. Whisk the egg, add salt and pepper then fry in a small pan until the egg is light in colour.
  5. Chop the nagai nuts for garnish.
  6. When all is ready, blanch the island cabbage in the boiling water with some onion and salt to taste… Strain and squeeze out water then place the blanched Island Cabbage.
  7. Put the Fold the fried egg into thirds and place on top of the tomato.
  8. Place Island cabbage on top of the egg and tomato.
  9. Top with coconut cream and garnish with nagai nuts.
