Silas and Patrick's Sweet Simboro

TEAM VANUATU

INGREDIENTS

2 Manioc (Breadfruit or Taro can be used here)
6 leaves Island Cabbage (Silverbeet can also be used)
3 Ripe Bananas
1 Brown Coconut
1 cup of Minced Beef
2 stalks of Coriander
1 clove Garlic
1 Brown Onion
Salt and Pepper to taste
10 Nagai nuts (Or Cashew Nuts)
2 tbsp Vegetable oil
2 slices of Tomato
INGREDIENTS (DIPPING SAUCE)
½ cup Ripe Pawpaw
1 tsp Sugar
2 Mint Leaves
20gm Honey

METHOD

  1. Peel then grate the Manioc. Mash the banana and mix with grated manioc.
  2. Scrape and squeeze the coconut for the cream and then add coconut cream to the Manioc and Banana mixture.
  3. Dice the coriander, onion and garlic. Mix with the beef mince and then sauté all.
  4. Take the best cabbage leaves and lay flat then place the manioc mix on top. Layer the mince on top of this and roll to form a parcel.
  5. Place into boiling water for 10 mins. Remove from the water and place on a plate. Sprinkle crumbed nagai nut and drizzle honey on top.
  6. For the dipping sauce, blend the pawpaw and honey. After it is smooth, place mint leaves on top. Pour dipping sauce on the side of the plate. Place two slices of tomato on plate for a garnish.
