Silas and Patrick's Island Yam Curry

INGREDIENTS

For the Curry:

1 small Yam
3 Brown Coconut (or a tin of coconut cream)
1 medium Onion
5 cloves of Garlic
8 Cherry Tomato
2 medium fresh Chili
Fresh Coriander
1 Spring Onion
1 tsp Cumin Powder
1 tsp Paprika Powder
1 tsp Curry Powder
8 Green Beans
Salt and Pepper (to taste)

For the Salad:

4 Lettuce Leaves
1 small Cucumber
Cooked Peanuts (to garnish)

METHOD

  1. Peel the yams and slice into 1cm pieces. Place into a pot of hot water and then boil for approx. 15-20mins, then drain.
  2. Scrape coconuts and squeeze to make coconut cream put in bowl to use later.
  3. Dice onion, garlic, tomato, chili and chopped coriander leaves.
  4. In a pan add a little bit of vegetable oil then add ingredients from step three as well as the cumin, paprika, curry powder. Stir all together for 2-3 mins.
  5. Into the same pan add the coconut cream and boil for 5mins.
  6. Add the cooked and drained cubed Yam to coconut curry sauce and season.
  7. Wash the lettuce leaves, peel and grate the cucumber.
  8. Wash the beans and blanch in hot water with salt for 2-3mins.
  9. Place the yam curry on the side of the plate; on the other side add a lettuce leaf, top with grated cucumber then the green beans. Garnish the yam curry with crushed peanuts.
