Rose and Anita's Cabbage Salad

INGREDIENTS

3 stalks Island Cabbage (spinach can be used instead)
1 handful / Natapoa or Navel Nut (Almonds can be used)
3 Red Radishes
1 Red Capsicum
1 Green Capsicum
½ Thumb of Ginger
1 Clove Garlic
½ thumb Turmeric
3 Tomatoes
Pinch of Parsley
1 medium Carrot
½ sliced Cucumber
Salt and Pepper

For the Dressing

Equal amounts of Juice of a lemon or lime and Virgin coconut oil
Salt and pepper to taste

METHOD

  1. Blanch Island cabbage for 3-5mins. In boiling salted water and then quickly cool in iced water.
  2. Remove, cool and strain and squeeze dry.
  3. Dice radish, green capsicum, red capsicum.
  4. Finely grate ginger, garlic and turmeric.
  5. Finley chop island cabbage.
  6. Dress and add all remaining ingredients together with the island cabbage (except the nuts and spring onions) and season to taste, mix so that the dressing is evenly distributed.
  7. Top with nuts and sliced spring onion.
