Rose and Anita's Cabbage Salad
TEAM VANUATU
INGREDIENTS
3 stalks Island Cabbage (spinach can be used instead)
1 handful / Natapoa or Navel Nut (Almonds can be used)
3 Red Radishes
1 Red Capsicum
1 Green Capsicum
½ Thumb of Ginger
1 Clove Garlic
½ thumb Turmeric
3 Tomatoes
Pinch of Parsley
1 medium Carrot
½ sliced Cucumber
Salt and Pepper
For the Dressing
Equal amounts of Juice of a lemon or lime and Virgin coconut oil
Salt and pepper to taste
METHOD
- Blanch Island cabbage for 3-5mins. In boiling salted water and then quickly cool in iced water.
- Remove, cool and strain and squeeze dry.
- Dice radish, green capsicum, red capsicum.
- Finely grate ginger, garlic and turmeric.
- Finley chop island cabbage.
- Dress and add all remaining ingredients together with the island cabbage (except the nuts and spring onions) and season to taste, mix so that the dressing is evenly distributed.
- Top with nuts and sliced spring onion.
