Knox and Leo's Vanuatu Tuna Soup

INGREDIENTS

1 kg fish bones washed well in cold water
1 tbsp coriander
4 spring onions (stalk only)
2 tuna steaks (cut into cubes)
50 grams ginger, peeled & grated
2 cloves garlic roughly chopped
6 pcs pumpkin tips
6 cherry tomatoes
Salt and pepper to season

METHOD

  1. Cover fish bones in cold water in a pot.
  2. Simmer for 15-20 minutes.
  3. Strain and season well with salt and pepper.
  4. Fry sliced ginger, chopped garlic, spring onion with coriander.
  5. Add 3 cups fish stock.
  6. Bring to a simmer.
  7. In a pan, fry cubed tuna for 2 minutes.
  8. Fry pumpkin tips with garlic for 3 minutes.
  9. Fry cherry tomatoes.
  10. In a bowl, place the cooked pumpkin tips, then tomato and lastly the tuna cubes.
  11. Then pour stock into each bowl and serve hot.
