Knox and Leo's Ni Van Fruit Salad

INGREDIENTS

Ingredients for Salad:

2 whole grapefruit
1 ripe mango, diced
½ ripe pawpaw, diced
½ shell green coconut flesh, sliced
8 nangai nuts (break and peel)
4 navel nuts (break and peel)
2 nantao (break and remove flesh)
Brown coconut, flesh cut into slices for garnish

Dressing:

½ cup grapefruit juice
¼ cup coconut milk
¼ cup lemon juice
4 stalks mint
1 stalk coriander
1 cup soursop flesh, seeds removed and chopped until smooth

METHOD

  1. Cut pawpaw and mango into cubes.
  2. Segment grapefruit.
  3. Scoop out flesh of the green coconut and cut into strips.
  4. Place all in a bowl and add a teaspoon of the lemon juice.
  5. In a separate bowl, mix coconut cream, soursop puree and remaining lemon juice.
  6. Add the chopped mint and coriander, then the grapefruit juice- this is the dressing.
  7. Add enough of the dressing to the fruit to coat well and divide into bowls.
  8. Garnish with the navel, nantao and nangai nuts, and a few slices of coconut.
