Knox and Leo's Ni Van Fruit Salad

INGREDIENTS
Ingredients for Salad:
2 whole grapefruit
1 ripe mango, diced
½ ripe pawpaw, diced
½ shell green coconut flesh, sliced
8 nangai nuts (break and peel)
4 navel nuts (break and peel)
2 nantao (break and remove flesh)
Brown coconut, flesh cut into slices for garnish
Dressing:
½ cup grapefruit juice
¼ cup coconut milk
¼ cup lemon juice
4 stalks mint
1 stalk coriander
1 cup soursop flesh, seeds removed and chopped until smooth
METHOD
- Cut pawpaw and mango into cubes.
- Segment grapefruit.
- Scoop out flesh of the green coconut and cut into strips.
- Place all in a bowl and add a teaspoon of the lemon juice.
- In a separate bowl, mix coconut cream, soursop puree and remaining lemon juice.
- Add the chopped mint and coriander, then the grapefruit juice- this is the dressing.
- Add enough of the dressing to the fruit to coat well and divide into bowls.
- Garnish with the navel, nantao and nangai nuts, and a few slices of coconut.
