

Knox and Leo's Kid Friendly Fish Simboro

INGREDIENTS
3 medium cassava, peeled and washed
250 grams fish fillets
50 gms peanuts, shelled
1 inch turmeric, grated
1 bundle bele leaves (use the large leaf variety)
¼ watermelon, seeds and skin removed
¼ pineapple
3 nakavika (kavika in Fiji)
1 handful baby river ferns (ota), blanched (Use kapisi vai, you Samoans)
½ cup virgin coconut oil
Few leaves of coriander
1.5 cup fresh coconut milk
Handful coriander leaves chopped
Toasted fermented coconut to garnish (optional - or use toasted fresh grated coconut)
METHOD
- Grate the cassava
- Fry off the fish then blend with peanuts until smooth
- Mix with grated cassava, coriander and season with salt and pepper
- Blanche bele leaves then strain and lay out flat
- Put a tbsp of cassava mix inside the bele leaves
- Roll up like a wrap, with ends covered
- Lay out carefully n a pot
- Cover with coconut milk, grated fresh turmeric
- Lightly boil for 20 mins
- Peel and cube watermelon, pineapple, nakavika and toss together.
- Blanche river ferns for 1 minute
- Toss the ferns with coconut oil, coriander and some seasoning
- Remove simboro from pot and lay on plate
- Drizzle the simboro with the coconut cream mixture from pot and then garnish with the fruit salsa
- Sprinkle with toasted fermented coconut
