John and Jeremiah’s Sua i’a

INGREDIENTS

1 whole fish
2 garlic cloves
2 onions
½ inch ginger, grated
2 tsp honey
1 thumb size piece turmeric, grated
1 small bunch coriander
Seasoning- salt and pepper

METHOD

  1. Fillet the fish and pat dry
  2. Clean and leave fish to dry for a further five minutes
  3. Grill fish till just cooked
  4. Remove fish meat from the bones and set aside
  5. Boil fish bones in water
  6. Add garlic, turmeric, and ginger
  7. Finally add honey and reduce by half
  8. Strain, season with salt and pepper and keep warm
  9. Place fish fillets on centre of plate
  10. Pour soup around the fish fillet
  11. Garnish with coriander leaves and the fins of the fish (for fun)
