John and Jeremiah’s Sua i’a
Team Samoa
INGREDIENTS
1 whole fish
2 garlic cloves
2 onions
½ inch ginger, grated
2 tsp honey
1 thumb size piece turmeric, grated
1 small bunch coriander
Seasoning- salt and pepper
METHOD
- Fillet the fish and pat dry
- Clean and leave fish to dry for a further five minutes
- Grill fish till just cooked
- Remove fish meat from the bones and set aside
- Boil fish bones in water
- Add garlic, turmeric, and ginger
- Finally add honey and reduce by half
- Strain, season with salt and pepper and keep warm
- Place fish fillets on centre of plate
- Pour soup around the fish fillet
- Garnish with coriander leaves and the fins of the fish (for fun)
