Jerry and Charlotte's Cream of Laupele Soup

INGREDIENTS

30 Laupele leaves (Spinach could be a good substitute)
1 litre water to boil
¼ cup chopped onion
1 tbsp grated ginger
2 tbsp chopped garlic
1 ½ cup coconut cream
Salt and pepper to season

For the Garnish:
4 slices thinly cut breadfruit(Ulu) you could use Kumala or Yam
½ cup cooking oil to fry
Pinch salt
Pinch Paprika

METHOD

  1. Thinly slice the Laupele leaves, place in the pot with boiling water. Cook Laupele until soft.
  2. While laupele is cooking add the chopped onion, grated ginger and chopped garlic.
  3. After 10 minutes use a stick blender to puree the Laupele mixture.
  4. Add coconut cream to Laupele mixture, season with salt and pepper to taste.
  5. Leave on a low heat while you do Step 6 and 7.
  6. Heat oil in a fry pan and once hot fry the Ulu to make chips.
  7. Season Ulu chips with salt and paprika.
  8. Ready to serve soup in a bowl and garnish with the Ulu chips.
