Basil and Nene's Soul Soup
TEAM VANUATU
INGREDIENTS
15ml of Vegetable Oil
2cm thumb of Ginger
2 cloves of Garlic
1 onion
¼ Bundle of Island Cabbage (You could substitute with English Spinach or Silverbeet)
500ml of Water
¼ Cup of Manioc Flour (Cornflour could be used instead)
Salt and Pepper to taste
Lime (to taste – squeeze)
1 stalk Spring Onion
METHOD
- Heat oil in a pot then add grated ginger and garlic and finely diced onions.
- Sauté until golden brown then turn heat to low.
- Add water to the pot and leave to simmer for 10-15mins.
- Wash and clean island cabbage – don’t remove stalks. Add to soup mixture. ( You can also add diced pumpkin, sweet potatoes, carrots and other vegetables at this stage).
- Simmer until Island cabbage turns light green – approximately 7-10 mins.
- Mix one tablespoon of manioc flour to 30mls of water In a cup Stir through and add to the soup until thickens, add salt and pepper and squeeze of lime to taste.
- Stir gently until ready to serve. Put into a soup bowl and garnish with finely chopped spring onion.
