Basil and Nene's Soul Soup

INGREDIENTS

15ml of Vegetable Oil
2cm thumb of Ginger
2 cloves of Garlic
1 onion
¼ Bundle of Island Cabbage (You could substitute with English Spinach or Silverbeet)
500ml of Water
¼ Cup of Manioc Flour (Cornflour could be used instead)
Salt and Pepper to taste
Lime (to taste – squeeze)
1 stalk Spring Onion

METHOD

  1. Heat oil in a pot then add grated ginger and garlic and finely diced onions.
  2. Sauté until golden brown then turn heat to low.
  3. Add water to the pot and leave to simmer for 10-15mins.
  4. Wash and clean island cabbage – don’t remove stalks. Add to soup mixture. ( You can also add diced pumpkin, sweet potatoes, carrots and other vegetables at this stage).
  5. Simmer until Island cabbage turns light green – approximately 7-10 mins.
  6. Mix one tablespoon of manioc flour to 30mls of water In a cup Stir through and add to the soup until thickens, add salt and pepper and squeeze of lime to taste.
  7. Stir gently until ready to serve. Put into a soup bowl and garnish with finely chopped spring onion.
