Robert Oliver’s Green Banana Salad

INGREDIENTS

6 green bananas
¼ cup milk or 1 teaspoon of vinegar
100 grams cooked ota tendrils (or any other green, beans are great too)
1 cup loose coriander or basil leaves, rinsed and dried
1 cup halved local cherry tomatoes, or chopped ripe tomato
1 clove garlic, minced
2 tbsp lime juice
1/3 cup virgin organic coconut oil (or extra virgin olive oil if you prefer)
Salt and pepper

METHOD

  1. Cut the core ends off the bananas
  2. Boil in plenty of water with a little milk or vinegar, this will stop black marks cooking in the skin of the bananas
  3. When the bananas are just soft the skins will split
  4. Drain and let cool
  5. Peel the green bananas
  6. Slice into a bowl
  7. Add the lime juice and olive oil
  8. Add the peppers, thyme, capers and cilantro
  9. Toss all the ingredients well
  10. Season and garnish with the ota

Jan Walsh I cooked this tonight. It really needs the capers and spring onions. It was a hit and we had never eaten green bananas before Thursday, April 25, 2024
