Mafi and Mia's Pele Roulade
TEAM TONGA
INGREDIENTS
5 Pele Leaves (chopped)
4 Eggs Whites (whisked)
Pinch of Salt
Pinch of Pepper
1 cup of Carrots (julienned)
1tbsp Onions (chopped)
2 whole Mango (peeled and chopped)
flesh from 1 Green Coconut
1 tbsp Coriander (chopped)
1 Lime
1 Tomato
1 cup Pineapple (diced)
METHOD
- Blend pele and add to whipped egg whites, add a bit of salt and pepper and spread evenly some baking paper, place on an tray in the oven and bake until egg is cooked.
- Blend one of the mangos, coconut flesh, coriander and some lime juice.
- Spread on top of the pele mixture.
- Place carrots and onions on top.
- Roll all ingredients and bake for another 10 minutes.
- Cut into small rounds and serve (like sushi).
- Mix chopped tomatoes, pineapple, mango, coriander and lime juice in a bowl and ready to serve.
