Lopeti and Kalo's Supo Hina (Pumpkin Soup)

TEAM TONGA

INGREDIENTS

½ CUP THINLY SLICED ONIONS
1 TBSP FRESH CRUSHED GINGER
2 CLOVES OF CRUSHED GARLICS
2 CUPS OF PEELED AND DICED PUMPKIN
1 CUP THINLY SLICED POTATOES
4 CUPS CHICKEN OR BEEF BROTH
SALT AND PEPPER FOR SEASONING
FRESH PARSLEY FOR GARNISH

METHOD

  1. Place all ingredients in a pot except the Salt and pepper and the parsley boil until pumpkin is soft.
  2. Blend all ingredients until it all becomes a puree mixture.
  3. Blend until smooth in the pot and then bring back to the heat.
  4. Adjust the seasoning with Salt and pepper.
  5. Serve soup while hot.
  6. Garnish with fresh Parsley.
