Lopeti and Kalo's Supo Hina (Pumpkin Soup)
TEAM TONGA
INGREDIENTS
½ CUP THINLY SLICED ONIONS
1 TBSP FRESH CRUSHED GINGER
2 CLOVES OF CRUSHED GARLICS
2 CUPS OF PEELED AND DICED PUMPKIN
1 CUP THINLY SLICED POTATOES
4 CUPS CHICKEN OR BEEF BROTH
SALT AND PEPPER FOR SEASONING
FRESH PARSLEY FOR GARNISH
METHOD
- Place all ingredients in a pot except the Salt and pepper and the parsley boil until pumpkin is soft.
- Blend all ingredients until it all becomes a puree mixture.
- Blend until smooth in the pot and then bring back to the heat.
- Adjust the seasoning with Salt and pepper.
- Serve soup while hot.
- Garnish with fresh Parsley.
