Jayden’s Favourite Baby Food
INGREDIENTS
1 fish head, washed well in cold water
2 brown coconuts
1 piece ginger
1 cup fermented coconut (use fresh grated coconut if you don’t have access to fermented)
1 piece cassava
1 plantain, ripe
5 bele leaves (island cabbage)
¼ pumpkin, skin removed
METHOD
- Simmer fish head in the brown coconut water with the onion and ginger, adding enough plain water to cover fish heads. Simmer for 15 minutes
- Peel and slice plantain and cube the pumpkin
- Boil for 10 mins
- Peel and grate cassava then add to pot (about 1 cup grated)
- Bring to boil again then add washed bele leaves for 1 minute
- Remove from heat, then add fermented coconut
- Blend thoroughly
- Then place the mixture back in a pot
- Reduce until you get a smooth creamy consistency
- Serve
