Jayden’s Favourite Baby Food

INGREDIENTS

1 fish head, washed well in cold water
2 brown coconuts
1 piece ginger
1 cup fermented coconut (use fresh grated coconut if you don’t have access to fermented)
1 piece cassava
1 plantain, ripe
5 bele leaves (island cabbage)
¼ pumpkin, skin removed

METHOD

  1. Simmer fish head in the brown coconut water with the onion and ginger, adding enough plain water to cover fish heads. Simmer for 15 minutes
  2. Peel and slice plantain and cube the pumpkin
  3. Boil for 10 mins
  4. Peel and grate cassava then add to pot (about 1 cup grated)
  5. Bring to boil again then add washed bele leaves for 1 minute
  6. Remove from heat, then add fermented coconut
  7. Blend thoroughly
  8. Then place the mixture back in a pot
  9. Reduce until you get a smooth creamy consistency
  10. Serve
