Francis and Tupou's Grilled Marinated Fish

TEAM TONGA

INGREDIENTS

3 tsp Plain Flour
2 cloves Garlic
1 handful chopped Parsley
2 Eggs beaten
Juice of half a Lemon
2 medium sized Mahimahi fillets (or any firm fleshed fish)
Pinch of Pepper
½ cup coconut milk

METHOD

  1. In a bowl place the flour, 1 clove of garlic, parsley, eggs, half of the lemon juice and mix.
  2. Place the fish fillets in the mixture make sure you cover all of the fish, leave to marinate (10 minutes).
  3. Put some oil in a fry pan on a medium heat, cook the fish for 2-3 minutes on each side until golden brown until the fish is cooked. Put on a plate.
  4. Heat a pan and add 1 tsp butter to melt then add other half lemon juice bring to the heat, once hot add the chopped garlic, when the garlic is starting to turn brown add black pepper and coconut milk. Bring back to the boil and simmer for 2 minutes.
  5. Pour the sauce over the fish and garnish.
