Sumi and Avi's Char Grill Wahoo with Grill Plantain Bananas, Rourou Sauce, Grilled Tomato and Lemon

INGREDIENTS

200 g firm but ripe Plantain Bananas
2 piece 200g Wahoo ( Swordfish or Tuna)
100g Rou rou leaf
1 Brown Coconut
10 g Coriander
20 g Onions
1 tsp Garlic (finely diced)
1 tsp Ginger (finely diced)
3 Lemons
2 Tomatoes

METHOD

  1. Boil the Plantain bananas for 15 minutes.
  2. Marinate the Wahoo in pounded garlic, ginger and chilli, oil salt and lemon.
  3. Scrape the coconut and make coconut cream.
  4. Blanch the rourou adding a tsp of baking soda to the boiling water.
  5. Strain the rourou quickly, then sautè with garlic, ginger, chilli and oil.
  6. Add coconut cream to the rourou, the rourou will break down to form the sauce, whisk or blitz to make smooth.
  7. Place the rourou sauce on the plate.
  8. Grill the plantain bananas and place on top of the sauce, grill the tomatoes.
  9. Chargrill the fish and finish off in the pan with lemon butter.
  10. Place the fish on top of the plantain.
  11. Garnish with grilled tomato and sliced lemon.
