Sela and Taufa’s Tongan Fish and Bean soup

INGREDIENTS

200 grams fish bones
1 tbsp virgin coconut oil
1 inch ginger, whole
4 cloves garlic
5 cups water
5 lemongrass leaves
1 onion, sliced
2 kumala, diced
1 yam, diced
12 long beans, cut into 6 cm pieces
4 leaves spinach, climbing spinach (shredded)
100 grams walu or other firm fish
1 cup coconut cream
Seasoning
Chilli (to taste)

METHOD

  1. Boil fish bones, coconut oil, ginger, garlic, and lemongrass in water
  2. Simmer for 10 minutes
  3. Strain then keep fish stock
  4. Boil kumala and yam in fish stock for 10 minutes
  5. Add beans for 2 mins
  6. Then add fish for 1 minute
  7. Add spinach to pot for 30 seconds
  8. Finally add coconut cream and bring to boil again
  9. Then remove from heat
  10. Season and add chilli to taste
