1.5 cups yellow cassava, cooked and mashed ½ cup blanched and chopped bele (island spinach) ½ cup ota tips, flash fried in a pan 1 tbsp garlic, minced 1 tbsp ginger, minced 1 chilli, fine chopped (optional) 1 capsicum, finely diced 1 onion, fine diced Salt to taste
Ingredients for the Mint Chutney:
¼ cup mint 2 tomatoes, chopped ½ green chilli, finely chopped 2 cloves garlic, finely chopped Salt to taste
Method for the Bele and Ota Patties:
Mix mashed cassava, bele, ota and onion with ginger and garlic.
Add capsicum and chilli then season with salt and pepper.
