Francis and Tupou's Pata Ika

INGREDIENTS

2 pieces of Wahoo ( or any firm flesh fish e.g. Marlin or Tuna)
6 ripe Pata Bananas (lady fingers)
1 medium brown onion (finely sliced)
1 small Green Onion (spring onion)
1 green Capsicum (finely diced)
1 red tomato (finely diced)
The Milk from 1 and half coconuts (1 can coconut cream)
The juice from one bush lemon (kola)
Pinch salt

METHOD

  1. Remove the skin from the Wahu and discard, cut the flesh into strips and place into (salted) boiling water until cooked. (10 minutes), remove from the pot.
  2. When the fish is cooked remove from the pot and shred to make sure the bones are all removed.
  3. Peel and slice the ripe Pata banana and place into a small pot.
  4. Place the fish in the pot with the Pata banana add sliced brown onions, diced capsicum, diced tomatoes add the coconut milk and lemon juice and bring to the heat.
  5. Gently simmer until the coconut milk is thick , do not stir it as it will become mush, just let it do its thing.
  6. After 10 minutes it is ready to serve. With a fish slice carefully remove from the pot so all the layers are in place, (Pata at the bottom).
