Francis and Tupou's Haka Root Crop Dish

TEAM TONGA

INGREDIENTS

2 medium size sweet potatoes (Kumala)
3 Plantain (firm ripe) Banana (Hopa)
3 ripe bananas (Siaine)
2 Pele Leaves (stems removed)
The milk from 3 brown coconuts (or 2 tins of coconut cream)

METHOD

  1. Peel the Kumala, Hopa and the siaine bananas. Cut the Kumala in half.
  2. Place the Plantain and sweet potatoes in a pot and add half the coconut milk.
  3. Bring to the boil, once boiling add the Pele leaves and the ripe bananas.
  4. Turn the temp down and leave on low until the coconut milk is boiling.
  5. Let the coconut milk thicken and then it's ready to serve.
  6. Place the Pele Leaves on to two plates then slice the sweet potato and share among the two plates, distribute the rest of the ingredients onto the plates, be careful with the banana so you don’t mush it.
