Mafi and Mia's Cassava Risotto

INGREDIENTS

VIRGIN COCONUT OIL (5O ML)
1 CLOVE GARLIC
1 ONION (FINELY DICED)
1 CUP GRATED FRESH CASSAVA (MANIOCA)
500 MLS WATER
1 FRESH COCONUT (CREAM) 100 MLS
PINCH OF SALT AND PEPPER
1 TBL SPOON CHOPPED CORRIANDER

METHOD

  1. ADD VIRGIN COCONUT OIL TO FRYING PAN
  2. ADD ONION AND GARLIC TO FRYING PAN AND FRY WITHOUT BROWNING
  3. ADD GRATED CASSAVA AND MIX WELL
  4. ADD 1 CUP WATER TO THE FRYING PAN AND KEEP COOKING UNTIL IT THICKENS (THE SAME PROCESS AS RISOTTO)
  5. ADD MORE WATER (1 CUP) AND KEEP STIRRING
  6. ADD COCONUT CREAM TO MIXED INREDIENTS AND KEEP STIRRING
  7. ADD CORRIANDER, SALT AND PEPPER
  8. ADD MORE WATER IF ITS TOO THICK , STIR AND SERVE.
